Caprese Salad with Garden Basil

A supermarket tomato will disappoint — a garden tomato still warm from the sun will change your life. Never refrigerate before serving.

🥕 Ingredients

  • 4 large ripe tomatoes, thickly sliced
  • 250g fresh buffalo mozzarella, torn
  • large handful fresh basil leaves
  • 4 tbsp best quality extra virgin olive oil
  • to taste flaky sea salt and cracked black pepper
  • optional aged balsamic vinegar

👩‍🍳 Method

Slice tomatoes thickly — about 1cm. Arrange on a large platter, slightly overlapping.

Tear mozzarella and tuck between and over the tomato slices.

Scatter basil leaves generously over everything — be lavish.

Drizzle with your best olive oil. Season with flaky salt and cracked pepper.

Add just a few drops of balsamic if using. Serve immediately at room temperature.
