Blend carrots, ginger, miso, vinegar, honey, and soy sauce until as smooth as possible.

With blender running, drizzle in sesame oil and neutral oil.

Add water to adjust consistency — it should coat a spoon but pour easily.

Taste and adjust — more vinegar for tartness, more honey for sweetness.
