Soak corn cobs in water 30 minutes (keeps husks from burning).

Mix butter with lime zest, lime juice, chilli, garlic, coriander, paprika, and salt.

Peel back husks without detaching, remove silk. Spread butter generously over kernels. Fold husks back.

Grill over medium-high heat 15-20 minutes, turning regularly.

Peel back husks fully, grill 2-3 minutes for colour. Serve with extra lime wedges.
