Combine all ingredients in a large heavy saucepan.

Bring to boil, stirring to dissolve sugar.

Reduce heat and simmer uncovered for 1.5-2 hours, stirring regularly, until thick.

Test: place a spoonful on a cold plate — it should wrinkle when pushed.

Pour into sterilised jars while hot. Seal immediately. Unopened: 12 months. Open: refrigerate 6 months.
