Roast Garlic Bread

🥕 Ingredients

  • 4 heads garlic
  • 4 tbsp extra virgin olive oil
  • to taste salt and pepper
  • several sprigs fresh thyme
  • 1 baguette or sourdough loaf, sliced
  • to serve good butter

👩‍🍳 Method

Preheat oven to 180°C. Slice the top quarter off each garlic head to expose the cloves. Place cut side up in a small baking dish.

Drizzle generously with olive oil, letting it pool in the cut cloves. Season with salt and pepper. Tuck thyme sprigs around the heads.

Cover tightly with foil. Roast 40–45 minutes until cloves are completely soft and golden.

Remove foil for the last 10 minutes to caramelise the tops slightly.

Squeeze the sweet soft garlic out of each clove and spread thickly on toasted bread with butter. Serve immediately.
