Sticky Citrus Pudding

🥕 Ingredients

  • 1 cup self-raising flour
  • 3/4 cup caster sugar
  • 1/2 cup milk
  • 60g butter, melted
  • 2 eggs
  • zest of 2 lemons or oranges
  • 2 tbsp citrus juice
  • 3/4 cup brown sugar (for sauce)
  • 1.5 cups boiling water (for sauce)
  • 2 tbsp citrus juice (for sauce)
  • to serve cream or ice cream

Preheat oven to 180°C. Grease a 1.5 litre baking dish.

Whisk together flour, caster sugar, milk, melted butter, eggs, zest and juice until smooth. Pour into the prepared dish.

Make sauce: stir brown sugar, boiling water and citrus juice until sugar dissolves. Carefully pour over the back of a spoon directly over the batter — do not mix it in.

Bake 30–35 minutes until the sponge is set and golden on top.

Dust with icing sugar and serve immediately from the dish with cream or ice cream.
